Microwave Brownie

4 years ago, if someone told me that chocolate brownie would become my standard dish, I would've laughed in their risible face. I was a mere child back then - with a chocolate craving, a bag of chocolate chips, and a microwave.

Now it's what I'm known for best. I've made this brownie for a selection of occasions - as a thank you gift, afternoon tea, shared supper, get well soon token, and mostly for my own satisfaction (no shame there). It's just so good. So good. Please make it. It's amazing.

Time: 5 min prep + 5 min cook

You need:
1/2 cup softened butter (112gm)
1 cup sugar
1 tsp vanilla
2 eggs
1 tsp baking powder
1/2 cup flour
1/2 cocoa
1/2 chocolate chips (optional, but it's you're like me, they're not optional AT ALL)

1. Cream the butter and sugar together. Add eggs and vanilla, mix well.
2. Mix baking powder, flour and cocoa together. Then add dry ingredients and chocolate chips to the butter mixture.
3. Scoop (I love that word) into a microwavable dish and microwave on high for approx 5 minutes.

No frills. I eat this with a spoon straight from the dish. If you do decide to serve it, allow it to cool and sprinkle with icing sugar.
