Monster Double Choc Cookies



I'm always up for a cookie. You could take a survey and I would tick all the boxes - choc chip, ginger, fudge, mint, berry. But one thing we all have to agree on, is that cookies are ALWAYS too small. I end up eating 4 or 5 or sometimes a dozen. And yet there have been so many things in the media about how sugar is bad for you, and how we should cut down on our intake of unhealthy foods, and maximise nutritious foods instead. A recent study I read said that instead of cutting out sugar, we should eat small portions - meaning 1 cookie instead of 5. 

What if they were.......MONSTER cookies? You could eat just as much cookie but technically still be keeping to your diet of "1 cookie per serving."

HA. Bet those nutritionists didn't think of that. (I always had a knack for finding the loopholes)

This batch was delectable, delicious and divine. They are so huge, you won't need a second. 

Monster Double Choc Cookies (Recipe adapted from here)

You need:
1 cup (220gm) butter
1 1/4 (125gm) sugar
2 (large) eggs
1 tsp vanilla essence 
1/2 cup (55gm) cocoa 
2 1/4 cups (225gm) all-purpose flour
1/4 tsp salt 
1 tsp baking powder 
2 cups (200gm) chocolate chips (I used a mixture between chocolate drops and chocolate buttons)

Directions:
1. Preheat oven to 180o C (350o F). In the bowl of an electric mixer, combine the butter and sugar. Beat on medium-high speed for 2-3 minutes until light and fluffy. Add vanilla essence. Then add eggs separately. Beat in cocoa until well mixed. 

2. Mix flour, salt and baking powder in a separate bowl. Then add flour mixture to butter mixture. Blend on low speed until just incorporated. Fold (or mix in) chocolate chips.

3. Roll cookie dough into balls. They should be as big as hamburger patties - I managed to fit 6 on each tray. Recipe makes 14 large MONSTER cookies.

4. Bake each tray for 15-20 minutes. Make sure you take the cookies out before they look done! If you wait too long, when they the cookies cool they will harden like rock (I have made this mistake). You should take them out when they look like brownie - still squishy. Also you should be able to smell when they are done.
