It's a short tale, but it's been a long week. Cupcakes live in New York, and also permanently on my to do list (for that free time that I NEVER have). The courage it took to spend 3 hours on something that only results in fist sized frosted lumps of sugar was a large requirement. But I splashed out and at the end of my splurge I had created a dozen. It was a quality investment and the only part of me that regrets it is my thighs (sorry).
The great new discovery that I'm proud of: I sprinkled cinnamon on the icing. It tastes shockingly excellent, it makes me want to sprinkle cinnamon on everything. My cat would hate that so I won't sprinkle it on her. Everything else I have no mercy for.
And if you want that cool swirly blue effect? Here's a neat video by Martha Stewart. It's 51 seconds long without an annoying intro.
Vanilla Cupcake recipe (from Nigella Lawson's "How to be a Domestic Goddess):
Ingredients
+ 125g unsalted butter, softened
+ 125g caster sugar
+ 2 large eggs
+ 125g self-raising flour
+ 1/2 teaspoons vanilla extract
+ 2 - 3 tablespoons milk
1. Preheat the oven to 200o C.
2. Put all ingredients except for milk in food processor and blitz until smooth. Pulse while adding milk down the funnel, to make a soft, dripping consistency.
3. Spoon and scrape to fit this scant mixture into 12 bun cases. Bake for 15 - 20 min or until golden on top.
Vanilla Frosting recipe:
Ingredients
+ 1 1/2 cups icing sugar
+ roughly 60g softened butter
+ tablespoon of milk or water
+ 3 tablespoons of Kremelta (vegetable shortening)
+ 1 teaspoon vanilla essence
1. Mix the butter and sugar. Add in all other ingredients. This is a very rough recipe, so play around until it suits your taste. The Kremelta is what makes it go all fluffy and nice, so add as much as you feel is necessary.

I use a Canon Digital Rebel. I would suggest googling tons of reviews and recommendations online - it takes patience, but doing your research is worth it!
